It's hard to pick a favorite, although I do love irises. I've been a member of the local iris society for about 3 years. Also, roses, orchids, and many more.
I was going to say the cauli-flower, because not only can you look at it, you can eat it as well. However, to be serious, although so many flowers are beautiful I have always thought that the orchid was a kind of level above, a flower with a unique quality. Back in my teenage days, when I would take a date to a formal dance, I would usually give my date a corsage of roses, unless she was very very special to me, in which case I would splurge on an orchid corsage.

Roses.

They have a wonderful smell..
Amaryllis for beauty and magnolias for smell.
They do smell nice.
The simple daisy ... I'm looking forward to pushing some up.

For fragrance, the mock orange, which I only recently found out the name. It's a flowering bush, not common in a bouquet.
And for some reason, I've always found lavender colored roses to be especially fragrant. Considered a flowering bush, but common in a bouquet.
My favorite tree flower though, is the Purple Robe Locust; not common in a bouquet:
