"Official NT's Super Bowl XLVIII Tailgating Party"
All right folks let's light the fires and kick the tires. Share some good Super Bowl Tailgating recipes with everyone.
Basic Salsa
2 large tomatoes, seeded, chopped
1 clove garlic, minced
1 green chili, seeded and chopped
2 scallions, sliced thin or -cup red onion, chopped
1 4-ounce can chopped jalapenos
1 teaspoon good olive oil
1 tablespoon lime juice or red wine vinegar
cup chopped fresh cilantro
1 light dash oregano
2 tablespoons tomato juice
Salt and pepper to taste
Chop, chop, chop and put everything together in a medium bowl. If you want to make the consistency tighter, chop some more. If you put ingredients in a processor or blender, you run the risk of getting a puree. True salsa lets you see the vegetables. Serve room temperature or chill. Either way, let the mixture sit and get acquainted for a little bit. Feel free to add hot sauce, after tasting, if needed.
Nachos
A package of tortilla chips (You can try artisan chips with black beans, garlic, chipotle or other flavors. As always, homemade tortilla chips are the best.)
Refried beans, canned or homemade, or substitute bean dip
Monterey Jack cheese, or packaged shredded Mexican blended cheese
Chopped jalapenos, raw or canned
Place two dozen chips on baking sheet, fairly close together, and spread refried beans or bean dip on top. Sprinkle cheese and jalapenos over the top of the chips. Broil lightly until the cheese melts. Watch them closelythis only takes a minute or two.
Serve right away with dips of salsa, guacamole and/or sour cream.
Options: Add chili con carne, or shredded chicken or pork. Remember the chips will get soggy with too much moisture, so add sparingly.

Earlier this week I made a Honey Pecan Pie from a recipe I got from Barb btco. It was so good that I ate 5/6 of it myself. Mike in Ga says that his recipe for Pecan Squares is even better. That's going to be my next effort. I'm somewhat addicted to Pecan Pie in all of its forms, but good salsa is also very interesting. The recipe file on this computer is going to be bulging with good stuff. I'm going to be bulging too, if I don't stop trying to eat everything in the file.

Another Salsa recipe a bit more fun
Salsa Supreme
2 large fresh beefsteak tomatoes, seeded, chopped
2 chiles (Serrano, or other hot), sliced thin
cup scallion, sliced very thin, include some green
cup white vinegar
2-1/2 tablespoons light brown sugar
1-1/2 teaspoon kosher salt
2 tablespoons ginger, fresh, minced
2 tablespoons garlic, fresh, minced
2 teaspoons mustard seeds
2 teaspoons fresh ground black pepper
2 teaspoons ground cumin
1 teaspoon cayenne
teaspoon turmeric
cup good olive oil
2 avocados, peeled, cut in small cubes
cup fresh cilantro, chopped fine
Combine tomatoes, scallion and chiles in a bowl and set aside.
Put vinegar in a saucepan. Bring to a boil and add sugar and salt. Stir to blend well, remove from heat.
Put garlic, ginger, mustard seeds, black pepper, cumin, cayenne and turmeric in a separate bowl. Use another saucepan. Heat olive oil to boiling, add garlic, ginger and spices mixture and cook less than a minute, stirring constantly. Remove from heat and stir in seasoned vinegar. Pour this over the tomato, scallion and chiles that have been set aside.
Let all cool down, cover and refrigerate at least three hours for flavors to marry. Before serving, add cut up avocados and cilantro and toss lightly. Serve when salsa is room temperature.
Here is an excellent cheese dip. Enjoy!!
Salsa and Cheese Appetizer
2 cloves of fresh garlic, minced
1 tablespoon corn oil
1 4-ounce can chopped green chiles, well drained
1 jar of your favorite salsa
2 tablespoons blond (golden) raisins
teaspoon cinnamon
teaspoon ground cloves
teaspoon ground cumin
pound chirazo, chopped small OR hot Italian sausage
1 pound Monterey Jack cheese, cut in inch slices
2 tablespoons sliced black olives, *optional
Tortilla chips
Saute garlic in corn oil for 1 minute, then add chilies, salsa, raisins, cinnamon, cloves and cumin. Bring this mix to boiling, reduce heat immediately and simmer all until slightly thickened. Cook chopped chirazo OR sausage until browned in a fry pan. Drain any fat and add 1 cup of the salsa mix to it.
Put half the cheese slices in an un-greased pie dish in a single layer and put salsa sausage mix over cheese, then top with remaining salsa and cheese, sprinkle with olives and bake at 400 degrees for ten minutes. Serve with tortilla chips.

For the corn bread lovers, this "will make a puppy pull a freight train" if you know what I mean (really good).
Corn Bread Casserole
Preheat oven to 425 degrees
2 large onions, chopped
6 tablespoons butter (or substitute)
2 eggs
2 tablespoons milk
2 17-ounce cans cream style corn
1 pound package of cornmeal muffin mix
1 cup sour cream
2 cups shredded cheddar cheese
Grease or spray a 9x13-inch baking dish (glass preferred). Sautee the onions in butter or substitute until golden in a frying pan then set aside. In a medium bowl, mix eggs, corn and milk together, add muffin mix and corn blending all together well. Spoon the onion over the top, then the sour cream over the onion. Sprinkle with the cheese and bake for 35 minutes or until puffed and golden. Let stand about 10 minutes before cutting into squares. May be refrigerated, frozen even re-heated.

I'll have to give your suggestions a try they sound interesting not to mention tastey.
I've had some of those John, and they're great. I've never been able to keep all of the stuff on the bun, but I found a solution; I just keep a plastic spoon handy and scoop up anything that falls on the plate and put it back as I'm eating it. Also good with grilled Bratwurst.
For those of you from the coastal areas:
Clam Cakes
1 can of chopped or minced clams (chilled)
bottle, or more clam juice (or ice water)
1-1/2 cups flour
2 teaspoons baking powder
1 egg white
1 pinch of each: salt, white pepper, and sugar
Mix all together until it forms a thick batter, more flour might be necessary. Drop by teaspoon fulls into very hot vegetable oil (1/2-1 inch). Do not go away. Keep cakes moving until browned or golden on each side. Remove with a slotted spoon and drain on paper towels. You may want to sprinkle more salt on them.
Very true; and the mustard absolutely must be there. That's what gives it a bit of a tangy flavor that brings out the taste of the meat.

Basic Guacamole Recipe
Ingredients:
5 large Hass avocadoes (black in color,slightly soft to the press)
2 large limes, juice of
1 medium white onion (diced)
3/4 cup loosely packed fresh cilantro (chopped finely)
1 large Tomato (Diced-make sure it isn't overly ripe)
salt
finely chopped fresh jalapeno (optional)
Directions:
1-Slice avocados in half. Discard the seed. Scoop out of shell with a spoon. Place in bowl.
2-Add juice of one fresh lime immediately to prevent browning. Use a fork and mash to desired consistency.
3-Add chopped onions, tomato, and cilantro. Stir gently to mix ingredients.
4-Add juice of second lime and then salt to taste. Stir just slightly, until incorporated.
5-Add jalapeo to taste.
6-Serve with your favorite tortilla chips for a dip, or use with your favorite Mexican dish.
7- a side note: this is to make a chunky, yet creamy guacamole. Some people prefer to use a food processor with all the ingredients to make for a VERY creamy dip
My Favorite Dip
Cajun Guacamole Recipe
Ingredients
2 ripe, Fresh California Avocados
1 Tbsp. fresh lemon juice
1/2 cup finely diced red bell pepper
1/2 cup small cherry tomatoes (cut in halves or quarters, if large)
1/4 cup thinly sliced green onion
3 cloves garlic, finely chopped
1/2 tsp. chopped, fresh thyme leaves or 1/4 rounded teaspoon dried
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 pinch cayenne pepper
Instructions:
Coarsely mash (DO NOT PUREE) avocados; stir in lemon juice. Fold in remaining ingredients.
Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap against the surface of the guacamole

Well the first half sucked for us. Hope the break lights a fire under the Broncos or it's over.
The thing that makes you mad is Denver plays a much better game than what they just displayed. There is no excuse for this.
I had a Dream.....yes a Dream,...that it would be Seahawks 22 and Denver 0 at half time.....of course I have only two fav teams,....Dallas and any team that plays against Denver....
I still think the Broncos will come back and take it. At least I wont give up on them anyway.
