The feature film Forks Over Knives examines the profound claim that most, if not all, of the degenerative diseases that afflict us can be controlled, or even reversed, by rejecting animal-based and processed foods.

I urge everyone to see this wonderful documentary film. I was at the premier in NYC and had a chance to speak to several doctors and people in the film. The science is overwhelming and I had the utmost faith in Dr. Esselstyn and Dr. Campbell. It could change your life!!!

This was the movie that sealed the deal for Shel and I becoming vegan. I had been developing recipes for a while anyway, so with this movie as the final push, we switched. I read Eat to Live immediately afterwards, then moved on to another 50 books and probably 10 or 12 other documentaries.

It's coming together for me too Peter.

Remember that suggestion about stuffing as much greens as possible?

I've moved beyond that LOL! Still experimenting with new foods but really enjoying the taste experience as well. The last couple of days the theme (LOL!) seems to be lottsa mango and yams. I just follow my gut and it works! I have a fair idea and beyond that I just kinda eat what I'm hankerin' for.

Love it; I can eat and be full, and full of energy...and lose weight! Thanks again!

I do remember and am glad things have gone so well for you. Another plus is it leaves more space for beers. :)

I've had the same experience.

I've been following the approach outlined by Fuhrman . (I've also read some wonderful material by Esslstyne . . . McDougal l . . . Barnard . . .-- basically the same approach with a few minor variations between them).

I should mention that when I started, I did it because I have always been interested in health-- especially diet and exercise. But weight loss was something I had more or less given up on for the time being-- rather, I was interested in eating to maximize health. However, I lost 20 pounds the first 2 months (and have lost an addition 5 pounds since . . . all without food cravings and without engaging in a some dangerouly, unhealthy fad diet)

Yes it does! Weird but I've noticed that the beers are hitting me a little quicker/harder than usuall...but I am recovering quicker from them as well. I have no idea but the only thing I have changed is my food, so I'm thinking it must have altered my metabolism in such a way that alcohol is more quickly absorbed or something.

Max Henry...You are sorely mistaken!!! There have been incidents of e-coli caused by tainted run-off onto organic fruit & veggie farms from nearby animal ranches (and the animal feces); but you will be hurting your health to pass on the veggies due to wrong information!!!

Debbie ,

Unfortunately that is not the only source of those bacteria . There are wild hogs which invade farm fields and spread those germs .

Even so, to give up veggies with a blanket statement that they are "full" of e-coli is foolish!!

Debbie ,

I would not suggest giving up veggies but I would suggest being cautious about items which grow just above the ground . There was a recall of vast quantities of spinach not that long ago due to such contamination .
I'm sure there are ways of dealing with this ... perhaps very thorough washing ?

Well of course you have to wash your veggies; LOL, no matter what!

Thing is with E-coli, it gets all over all kindsa stuff. Meat, prepared foods, canned foods, tissue, urine, clothes, hands, steering wheels, drinking fountains...you name it and you will find E-coli there. Of course when it gets into food we hear about it more; but in reality, most folk are completely unaware and unconcerned.Thoroughhygieneis a must for healthy living.

When are they gonna come up with the new improved F-coli ?

They are working on it now...but Proteus Mirabilis is throwing a hissy fit (terrible drama queen when somebody else has the spotlight) and Pseudomonas aeruginosa is fit to be tied as they thought they were next in line for an upgrade. Only time will tell!

There are wild hogs which invade farm fields and spread those germs .

Well, they are also in other places.

In fact, I've seen more than a few wild hogs invading restaurants-- public places-- even invading the beach!

I would not suggest giving up veggies

It might be safer to merely give up veggies entirely and eat only meat.

Let's see....Mad Cow Disease...Swine Flu... Bird Flu...various types of parasites....

Well...everyone knows that wild caught fish are healthy (except for PCBs, Mercury, and probably a few other nasty chemicals)

(/sarcasm)

Be forewarned, that is what vegetables do to people.

Fruits and vegetables can be dangerous. I saw some packages of frozen Wild Blueberries in Whole Foods the other day. I was tempted to buy some and take them home--- but I was afraid that they might be too wild-- and that when they thawed out they might attack me!
