LEMON GARLIC CHICKEN
LEMON GARLIC CHICKEN
1 1/2 pounds skinless chicken parts
1 large lemon juiced and zested
1/4 cup olive oil
3 cloves garlic
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon paprika
1 teaspoon dried oregano
1 jalapeno - cleaned
Pat the chicken dry and place in a large (1 gallon) zip-lock bag.
Finely chop the garlic and jalapeno, the finer you can do this the better. Please in a small bowl and add the remaining ingredients and mix together.
Pour over the chicken and seal the bag, squeezing out as much air as possible. Massage the marinade into the chicken and place in the refrigerator. You want to marinate a minimum of 2 hours but overnight is best.
When ready to cook let the chicken come to room temperature. You can grill the chicken until it's done or bake the chicken in the oven. I'll include oven temp & timing to make it easier but I prefer to grill the chicken.
Preheat oven to 425 degrees. Place the chicken on a foil-lined baking sheet. Bake uncovered for 25 minutes. Flip the chicken pieces and cook for another 10 minutes or until chicken reaches an internal temp of 165 F and is no longer pink.
Yum. I'm not usually a big fan of chicken but that sound darned good.
This sounds good. I usually use boneless, skinless chicken breasts for convenience (and trying to keep my cholesterol under control), and this sounds like a good alternative to the same old, same old.
Sounds good to me! I a big chicken fan cooked just about any way but BBQ'd.A spicy dish like this would set my taste buds jumping for joy!
I also like the fact that it's incredibly easy to prep. You can also prep the marinade in a blender and basically juice the garlic and jalapeno with the remainder of the ingredients. Using a blender allows you to play around with ingredients too which is always fun, such as adding an extra jalapeno, onion, tangerines or pineapple... hell, when it comes to food I just like to play.
I do a lot of that. Making the same things gets boring, so sometimes I will just pick whatever is in the fridge and cabinet and throw it together. If it's good I eat it. If it's not good the disposal eats it. (grin)
