Joyce's Shrimp Macaroni Salad
This dish was something my mom would make at the house or bring to other houses for the family to enjoy. She never measured so I just made it from how it looked and tasted.
The picture was googled and I found one that looked exactly like the dish.
You will need:
1 pound box of elbow macaroni.
6 small cans of tiny shrimp, drained. ( The size of tuna cans)
3 large ribs of celery chopped small.
1 small onion chopped small.
About 3 tablespoons of Old Bay seasoning.
About 2 and a half cups of Mayonnaise. Now she put a lot on the salad so it would not dry out like some do after it sets in the fridge. So just make sure that all the salad is covered well with the mayonnaise.
Cook the macaroni according to the package directions. Then drain well and run cold water over it. drain well again. Put in a large pot and add the shrimp that is drained, celery, onions and mix well. Then ad the mayonnaise and mix well then the Old Bay seasoning.
Put the salad in a covered container in the fridge for 6 hours or more. Best if you make it the day before.
Then eat and enjoy!
My mom would love if you all tried it! : )
I love shrimp, and this sounds like it would indeed be very tasty.
Hi Kath! My mom made one similar but with tuna instead of shrimp. She also used Miracle Whip instead of mayo. I only use mayo on my sammiches (unless it's bologna), everything else as far as "salad wise" I use MW, like in my deviled eggs, or cold pasta dishes. I am definitely going to try this with the shrimp . I've never had canned shrimp, is it good? Like are they deveined ?
