Lima Bean Bake
2 cups dried baby Lima beans
2 teaspoons salt
1/2 cup chopped onion
1/4 cup chopped bell pepper
1/4 cup cooking oil
2 cups stewed tomatoes
Shredded American cheese
Rinse and sort beans. Add 1 1/2 quarts of water. Bring to a boil and simmer till tender, about 1 1/2 hours. Add salt let rest then drain. Saute onion and bell pepper in cooking oil. Add tomatoes and beans. Season to taste with salt and pepper and pour into casserole dish. Sprinkle heavily with cheese and bake at 350 for about 5 minutes.
