THE NEWSTALKERS COOKBOOK

  • 3 lbs yellow crookneck squash (about 3-4 squash) washed and sliced
  • 1 large onion, chopped

Cook the two together till tender in a small amount of water. Season with garlic salt and pepper and 3 tablespoons of salted butter or margarine. Add 1 can of whole kernel corn, drained. Add 1 small can of chopped green chilies. Add 1/2 pound of Old English cheese, cubes. Cook until cheese melts. Last add 1 large fresh tomato. Heat about 10 minutes and it's ready to go.

Cheesy Zucchini "bread" sticks

I do like me some zucchini cheese sticks. And I like zucchini tempura cheese sticks as well. I miss my Fondue pot...jrSmiley_89_smiley_image.gif

Yeah me too. Growing up I didn't like it at all. Mom would just boil it and mash with butter and salt and pepper most of the time. The texture just didn't appeal to me as a kid.

I like the old fashioned yellow crookneck squash sliced about a 1/4 inch thick and boiled with diced yellow onions, with a bit of butter, salt and pepper. Mashed squash, unless made into a soup, would not appeal to me either. jrSmiley_18_smiley_image.gif

I always assumed she made it like that because that's how my Dad liked it. It's funny that how some foods are prepared for you as a kid can influence your tastes. To this day I don't want cooked spinach or cauliflower near my plate however raw in a salad, yummy.

How very true. As a kid I loved fried hominy, but, for some reason as I got older I started to dislike it, and now I won't touch it. Same with grits and Malt-O-Meal. I liked them as a kid and I now I can't stand them.

My mom fries sliced yellow or zucchini squash after breading it lightly with cornmeal.  I like that pretty well, but you have to eat it while it's piping hot.  Like a lot of fried foods, it's not nearly as good if it cools down a bit.

When I had my garden I grew a good deal of zucchini and waited until they got a pretty good size before picking. I cut them in slices and breaded them with a mixture of flour, onion powder, garlic powder and salt and pepper. Then quickly fried them to a golden brown. As you say, not as tasty when left to get cold.
