Start with two large bowls; one for the dry ingredients and one for the wet (or put the dry ingredients in a large ziplock bag).

Into bowl #1 (or a large ziplock bag) mix the following dry ingredients:

2/3 cup of light brown sugar

1/3 cup of white granulated sugar

1/2 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. cayenne pepper

Into bowl #2 whisk together the following wet ingredients:

1 egg white plus 1 Tablespoon of water

a dash of vanilla extract

1. Add 3 cups of whole pecans to the egg white mixture, mixing and coating the pecans well.

2. Pour the wet pecans into the dry ingredients in the large ziplock bag. Shake the pecans until they are well-coated.

3. Spread the pecans out on a large baking sheet and bake at 300 degrees for about 40 minutes stirring at least once half way through.

4. Let the blasted things cool before eating (because you will burn your tongue and they actually taste better once they are cooled anyway). These are good any time and make great holiday treats.

Caution: They are addicting!
