Easy Chicken Pie

Ingredients;

1whole chicken

1 1/2 cups of chicken stock

1 can cream of celery soup

2 cups peas and carrots

1 stick of butter (melted)

1 cup of flour

1 tsp. Salt

1/2 tsp. Black pepper

2 tsp. Baking powder

1 cup of milk

Bring chicken to a boil in a big pot and cook until done. Let cool then remove skin and bones. Cut into bite sized pieces and place in a baking dish (I use a 9x12 cake pan) along with the peas and carrots. Mix chicken stock and soup, heating at medium-low and stirring until smooth then set aside. Mix all of the other ingredients. Pour the broth mixture over the chicken. Then pour the flour mixture over it all. Bake at 425 for about 30 minutes or until crust is brown.

Sounds good Greg, although I would probably use prepared chicken parts rather than de-bone the whole chicken myself.

This recipe raised a thought too.  Check out my beef stew recipe.  I'd bet that it could be put into a pie crust and make a pretty good beef pot pie.  Something to try in the future.

I'd bet that it could be put into a pie crust and make a pretty good beef pot pie. 

I thought of that after reading your recipe, and when it gets back down to double digit temps again here I will give that a try. I think it would go great over Fry Bread as well.
