I wonder if a cat can smell a cucumber. They act like they don't know the cucumber is there, until they see it... and I would guess that they are far more accustomed to having smell or hearing reach them first. So this unexpected presence is a shock.
OTOH... as a species, cats don't seem to be the easiest critters to traumatize.
I have a stuffed alligator baby from about 1959. It was legal then. Anyway, his name is Albert, and I slept with him as a child. I still have him, of course, and he lives in the closet's top shelf. I was in that closet, pulling down old shoe boxes, to see what old shoes I had that I could possibly still wear, because all that platform nonsense is back in style, and Albert fell off the shelf, landing near my Pharaoh, who is my large, brave, non-hysterical baby. He LEAPED up and took off, out the door, down the hall, up the wall, and into the master bedroom, up under the bed.
It took him about 2 days to forgive me. And I didn't do it on purpose, I can assure you!
Explain that.
