Buzz's Banana Blueberry Pancakes
Although this is just a stock photo, they do look a little like these:
Ingredients:
1 cup of flour
2 teaspoons of baking powder
2 medium size ripe bananas
1 small package of fresh blueberries
1 medium egg
3/4 cup of whole milk
2 tablespoons of vegetable oil
a pinch of salt
Method:
Mix the baking powder and pinch of salt into the flour
In a separate bowl, beat the egg, then add the oil and the milk and mix well, then add to the flour and blend,
Crush the bananas with a fork until they form a lumpy sauce, then add to the mix, and blend
Then stir in the blueberries to make a total blended mix.
Coat a large frying pan flat surface with a thin layer of butter or vegetable oil (mine is 12 inch diameter with a 10 inch flat surface) and heat over a medium-low gas flame (have not tried electric, but I assume it works as well) until a tiny sprinkle of water on it will dance and sizzle. Then put 4 separate scoops of the mix spread apart over the surface and fry for a couple of minutes, then turn over for another couple of minutes (or until golden brown).
Voila - 4 pancakes
Repeat the butter or vegetable oil coating and scoops of mix until the mix is used up. It should make about 12 pancakes.
Top with maple syrup or honey.
I also add some cinnamon to the dry mix, but the pancakes will be pretty good without it. The banana sauce will add sweetness and make the pancakes nice and moist.
This is one of my favourite breakfasts, and I make it about once a week, always with bananas, but sometimes with something other than blueberries, like raisins and wolfberries, and sometimes poppyseeds.

I'll have to try them. I much prefer when the bananas are mashed into the batter, as in this recipe, rather than being sliced into it. This way every bite has banana flavor!
To get a stronger banana flavour, you can mash more than 2. I often mash 3.

But sir, you are no Elvis. Elvis would know that peanut butter goes with banana pancakes, not blueberries.
LOL. I do enjoy peanut butter and strawberry jam sandwiches with sliced bananas in them, on very fresh white bread, accompanied by a glass of very cold milk.
Those sound really, really good. Of course, my daughter is allergic to blueberries and would have to use another fruit but that's easy enough to arrange. The poor baby. If she had to be allergic to something, why couldn't it be something like Brussels Sprouts, which she would never miss anyway?

I think I figured it out Buzz. When I checked the group specs, autojoin by commenting wasn't checked. It is now. Just make another comment anywhere in the group and you should be in.
I have moderator powers to enable me to zap the spammers that try to join NT and post their spam - and since many of them are smart enough to do it while America is asleep, I'm awake so if I'm on the computer I get a flag on my screen and I wipe them out immediately. It's the moderator powers that enables me to automatically post on any non-private group without having to join first.
That's good to know Buzz, and that is likely why you do not show up as a Member in our group. Same thing happens with sandy, as she is a Mod, and why she does not show up in the Members list even though she has posted in the group. Thanks for the heads up.

This sounds like a great pancake recipe and I will have to give it a try. But, like TTGA's Daughter, I am allergic to Blueberries, so I will try strawberries or raspberries instead. It would seem that the banana pancakes would be a great staple for most any kind of fruit, as most fruits go well with Bananas.
