THE NEWSTALKERS COOKBOOK

Here is a recipe that I would make from time to time that makes a nice little coffee cake.  Pour yourself a cup of coffee and cut a slice of this cake and enjoy.....

You will need:

2 eggs at room temperature

1 cup of granulated sugar

1/4 pound of butter (half of stick)

1/2 cup of luck warm milk

1 cup of flour

1/4 teaspoon of salt

1 teaspoon of baking powder

1 teaspoon of Vanilla

Topping:  2 Tablespoons of brown sugar, 1 tablespoon of white sugar, 1 teaspoon of cinnamon.  Put in a small mixing bowl and mix well with a fork.

1. In a large mixing bowl, cream butter by gradually adding the cup of sugar.

2. Add eggs one at a time.

3. Sift the flour, salt and backing powder together then add it alternately with the milk to the creamed butter mixture.

4. Blend in the Vanilla.  Mix it all up well.

5. Put in a greased 8x8 baking pan. ( used glass)

6. Dot with about a teaspoon of cut up butter on top of the batter.

7. Sprinkle the topping on the top to cover the cake.

Bake in a 375 preheated oven for about 30 minutes. Check with a toothpick.

You can let it cool or eat it right out of the oven after it sits for a bit.

Enjoy.....  : )

That's great.  My wife has taken up some serious baking since the whole lock down thing began.  She made amazing cinnamon rolls recently.  Just like Cinnabon!

Looks good, with my lack of baking skills and experience, I'll have to stick with biscuits or bought cinnamon buns.  Cinnabons are worth driving to the truckstop to get them

I bet a smear of apple pie filling on top of this would be worth a try.

That happens to be one of my favorite cakes. My other is cheesecake!

I will definitely make this recipe! Thanks Kathleen!
