Burning carbons of any kind, which includes, the meat itself, the fat from the meat, the charcoal, wood, or anything else burned on the grill, produces PAHs, Polycylic Aromatic Hydrocarbons. These were a big worry down in the Gulf during the spill. PAHs are carcinogenic, and may cause cancer in humans, if ingested. Regulators are now reacting to this risk by seeking to limit the amount of PAHs in your commercially prepared smoked meats and foods.
Your choice of barbecued meat does impact on your cancer risk. Not only do burgers and sausages show the highest levels of PAHs during barbecuing, eating processed and red meat increases the risk of bowel cancers. Switch to barbecued fish, lean beef and chicken, which are generally healthier.

We haven't grilled out all summer-- not because it's killing us, but because we haven't been down to our camper. Golly, I miss it!

We grill burgers, steaks, pork chops, chicken, fish, sausages and all manner of vegetables throughout the spring, summer and fall
I have given up smoking, drinking, trans-fats, high sugar foods, salt and all manner of cookies, cakes and pies
If the stuff from the grill is now going to kill me, well I guess it has to be something.

I love the taste of carcinogens in the evening...
We grill all kinds of things, too. My vegetables are really healthy, until I add that giant glob of butter to the foil packet. We use a squirt gun to keep the fires down, so that things don't become charred. Other than that, carcinogens from the grill are the last thing I'm worried about!
e use olive oil probably not a lot better for us, but we love the taste of it

We don't grill out in the summer. We grill out in the winter down here and I didn't grill at all last year. The price of decent steaks was (and still is) too high. I may have to break down and actually grill.... .hamburgers this coming winter!

As the NCO of grilling, safety is paramount. Please check those brushes for wear and tear often. A pair of pliers will do the job. Tug with the same pressure needed to pull grass out of the ground. If the wire bristles separate from the handle, replace immediately. Check the grill surface once it's brushed too. Those wire bristles will ruin a good carcinogen every time, if swallowed. I use a rag with bacon grease, after brushing and inspecting, in case I missed something. Yes, my coronaries love me.
We've done steak and veggies a few times this year, yum yum. Low and slow keeps burning to a minimum.
I use a plastic brush thingy... No real bristles! I'll have to ask my husband what he does, because he is in charge of grilling, and cleaning. I'm in charge of vegetables, and cleanup over all... etc.
I've tried them thingy's too, meh. They need to be used when the grill is cool, as they are plastic. Grill crud come of easier when it's hot.
I found another article that says to use aluminium foil, so save it and recycle it as a grill cleaner. I haven't tried it yet but I will.

Yeah, no joke! I cook all the extras, while he grills, carry all that out, then carry all the plates in, etc. and do the dishes-- of course all this is in the camper, where the grill is located. We have a good Coleman grill on legs, that has sort of a teflon type of grill. The brush thing is also Coleman brand, and so far, nothing has melted... It is easy to clean, thankfully.
I tried to make my son do the dishes, and he does them, but I end up re-washing them. Somehow, in the camper, it is a lot like my playhouse, so it's not so bad...
Chicken is good, and so are pork chops-- we really don't do that many steaks...
Steaks are way too expensive!

That sounds good, Petey! We rarely have fresh fish, unless someone gives it to us. But I will remember your suggestion!
I like pork chops too, but admit that I have very little experience with grilling chicken. I do have a book on beer can chicken that I have been wanting to try though!
We soak ours, all day, in a marinade, then grill it! at the very last, we brush on sweet barbeque sauce, and wow, that's good!
For so many years I lived in a house and had an outdoor barbecue until I came to China. I really do miss barbecuing. My favourite to BBQ was pork ribs. First, without separating the ribs, coat them with BBQ sauce and spices, wrap them in tin foil and bake them in the oven for (don't remember how long - it's been so long since I did it), then take them out of the foil and put them right on the BBQ not too long to grill both sides, then separate them and eat them. It did the best job.
I think that to make sure chicken in cooked right through you should do the same with sectioned chicken.
I BBQ fish quite often, and it's wonderful.

Dear Friend Dowser: I favor grilling fresh veggies on foil.
I add dressings, and water.
The water tenderizes, and the flavors derive fromthe dressing.
